Potato Discs in Red Sauce
This recipe is more Egyptian even though in Lebanon we do the same thing but with the addition of kafta balls. It is one of those to go to when there is no time to shop for groceries but the kids are hungry.
- 6 medium potatoes
- water to cover
- 3 tablespoons tomato paste
- salt and pepper to taste
- 1 medium onion
- 2 cloves garlic mashed
- 1 tablespoon vegetable oil
- 1 chicken bouillon (optional)
Peel and cut the potatoes into disks and put them in a pot. Cut the onion into thin long strips and add them to the potatoes. Add the salt, pepper, garlic, tomato paste, oil and chicken bouillon. add water to cover the ingredients. Put the lid and cook on medium heat until the potatoes are cooked.
The potatoes could be eaten on their own but are best served with rice. Check my basmati rice recipe here.
It is hard here to give the number of calories because it is going to depend on the amount of water added to you and the weight of the potatoes used.
When I make it the serving of 200g of potatoes usually has around 65 calories
