Mujaddara

Mujaddara

This is a very Lebanese meal. It is done differently from one area to the other in Lebanon. In Beirut, they make it with rice while we, Bekaa people,  make it with burgol. Burgol is basically crushed wheat. With this meal, you can’t judge a book by its cover. I know that the meal looks deceiving. It does not look very delicious but it is. It’s easy, fast and extremely healthy. 

Ingredients: 

  • 1 cup brown lentil
  • 1 medium onion cut into small squares
  • 1/2 cup  course burgol (I use the cedar #3)
  • 3 tablespoon oil (can use vegetable oil or olive oil) 
  • salt
  • water

Directions:

Cook the onions with oil until they are a little reddish. Add the lentil, burgol, and salt. Add water to cover the ingredients with a couple of inches to spare. Cover them and cook on medium heat until the lentils are cooked. Check on them every 15 minutes in the case water dried out before they get cooked. Just Simply add more water. 

Arabic food is very forgiving. You can taste them when you feel they might be done to see if they need more salt or they need more water to cook. 

Note:

You can eat it on it own but will taste better with a nice tomato and lettuce salad. If you want to add meat or chicken. Mujaddara with salad and steak is really yummy.

 I like it mix it with a tablespoon of yogurt and eat it.
